Red Velvet Cupcakes

These were a birthday present for a friend.  They are red velvet cupcakes with green and white swirl swiss meringue buttercream, and sprinkled with white nonpareils and silver dragees.

  1. What makes cake "red velvet?" I think I know what it is, but why is it called velvet? Is it because it's smooth? Boy, those look rich, by the way--don't try to get me to eat one after January 1, I'll be trying to lose weight!
